If you’re on the hunt for a new gourmet pub experience in the south-west, look no further than the recently opened Busselton Pavilion, affectionately known as “The Pav.” This relaxed gastro pub is setting a new standard in the heart of Busselton, offering a classic pub menu with a contemporary twist. You’ll find it just off the main road through Busselton (Queen Street), in the new Busselton Central shopping complex.

The Pav is the newest opening of Perth hospitality legend John Parker, known for his popular venues including The Royal Hotel, Fleur, The Standard, and Karrinyup’s Dandelion. His vision here combines a restaurant, pub, private dining room, wine shop, and in-house distillery, creating a multifaceted venue with enough space to accommodate up to 500 guests.

The classic pub grub menu has been reimagined by acclaimed WA chef Brendan Pratt, formerly of Vasse Felix. Now serving as the Parker Group’s new Culinary Director, Pratt brings his passion for locally sourced ingredients and innovative cooking techniques to each dish. Whether you’re craving a hearty steak, fresh line-caught seafood, or casual share plates, the menu has something to suit every palate. First, we shared a French onion dip and potato chips decadently topped with salmon roe ($22). I loved how the little pearls popped in my mouth.  The cured scallops ($21), with fenugreek and sesame were also deliciously fresh.

Mr H chose the cheeseburger and chips – making it a double patty for an extra $6. Served with plenty of well-seasoned hot chips, this was a tasty burger indeed.

As the fish of the day had sold out, I had my eye on the rib-eye steak as a plan B. I love a bearnaise sauce, and this didn’t disappoint. The well cooked and rested steak was full of flavour and served with plenty of chips.

Complementing the food is an impressive drinks menu, featuring the best of the renowned local beer and wine scene. The selection is continuously rotating, ensuring there’s always something new and exciting to try. I enjoyed my wine – you just can’t go wrong with a Margaret River Chardonnay. Mr H was happy with the good selection of WA craft beers on tap.

Wine enthusiasts should drop into the neighboring boutique South West Wine Shop and wine bar within The Pav. Here, you’ll find a daily pour menu showcasing exceptional wines from smaller wineries that don’t have their own cellar doors. It’s a great opportunity to discover something new to you and support local producers. The expertly curated retail space sets out wines in groups of flavours, rather than the usual, red, white, rose, bubbles etc. This thoughtful approach allows visitors to explore and purchase wines that they might not otherwise have tried, based on what flavours they lean towards, making every visit to The Pav a unique experience.

The Pav is set to open its very own distillery soon, which will be pouring house-made G&Ts.

Open for trading five days a week, from Wednesday to Sunday, 11 am ‘til late, The Pav is perfect for a casual lunch, a special dinner, or a lively evening out. Opened in January 2024, it has quickly established itself in Busselton’s social scene.
